This is a Nutritious Delicious fave! It’s a lot like pumpkin pie but without all the sugar and carbs. Also, no gluten and no dairy. Enjoy!
Ingredients:
Pecan or other nut based crust (see gluten-free pie crust)
1/8 tsp nutmeg
1/4 tsp sea salt
1/4 tsp clove powder
3/4 tsp ginger powder
2 tsp cinnamon
1 tsp blackstrap molasses
1 tsp vanilla extract
1/2 cup full fat organic coconut milk
4 chicken eggs
15 oz can organic pumpkin
40-45 drops vanilla cream stevia
How to:
Put all ingredients into bowl and either stir well with fork or blend on medium with hand blender for 1 minute. Pour into pie crust.
Bake 350 for 30-40 minutes
